This Ethiopian addition to our line up comes from our friends at Osito. This wonderful coffee is from the producers of the Yukro kebele in Kecho Anderacha. Jimma. Coffee cherries are delivered to the Telila washing station and this particular coffee is Honey Processed. After the cherries are washed and pulped they are dry fermented for 4-6 hours and then dried for 12-15 days, constantly being moved and turned to stop mould forming and to ensure an even drying. Honey Processed coffees, much like Natural processed coffees are a time consuming process with added risk to the crop for the farmers and producers involved, but as you can see with this coffee, its well worth the work.
