New Faces and Exciting Plans

We’re delighted to celebrate the very talented Louise, who has been with us for many years, to the new position of Executive Chef! She’s already hard at work crafting a brand-new brunch menu, due to launch in early spring.

Joining Louise is Reece, our now Head of Bakery and Production. Building on the success of our homemade chocolate croissants (oh my they’re good!), Reece has exciting plans for new pastries, seasonal cakes, biscuits, and, of course, keeping on baking our delicious sourdough bread. Keep an eye out for a revamped counter at our Trumpington Street café too, featuring a new and seasonal deli selection.

The cafe team look forward to welcoming you very soon and let us know if you have any ideas to make your experience even better with us – we’re always keen to hear from you and keep on making things even better!

Roastery Notes: New Origins and Exciting Explorations

Greetings from the roastery! We’ve kicked off the year with the return of a beloved bean: the Genjia Challa. This is our third time sourcing from Mike Mamo & Ositio, and this time, we’ve secured a honey-processed lot. Expect a smooth butterscotch sweetness with a delicate stone fruit finish. Trust us, it’s incredibly easy to drink!

Looking ahead, we’re excited to welcome some exceptional Peruvian coffees in the coming weeks. We’ll be introducing beans from two new farms this year, including a lot from Eli Chilcon (brother of Roger Chilcon, whose coffee we featured in 2023) which will be hitting the roasters in mid-to-late February.

Filter coffee enthusiasts can also anticipate the arrival of the San Ramon Alto later this month. This lot offers a slightly bolder flavour profile than our usual filter offerings, with notes of stone fruit and guava, complemented by a rich molasses and almond finish.

As we continue to curate our coffee selection for the year, we’d love to hear from you! Which coffees did you particularly enjoy last year? Are there any origins or varieties you’d like us to explore? We’re particularly keen to source some exciting new beans from Ecuador and expand our range of fine robusta.

Share your thoughts on our Insta page – we’re always eager to hear from fellow coffee lovers. Until next time, happy brewing!

A Fresh Brew of Ideas from the Kitchen

Greetings, brunch aficionados! It’s Louise here, recently appointed to oversee all things culinary. I’m thrilled to share a glimpse into what’s cooking in our kitchens.

We’re embarking on a journey to craft a brand-new menu, brimming with delectable dishes inspired by the vibrant food scene both here in Cambridge and further afield in London. Our talented team of chefs are busy gathering ideas and exploring the latest tastes from all across the country.

We anticipate having a draft menu ready by the end of January, but crafting the perfect menu takes time and lots of iterations to make sure your plates are full of flavour. We meticulously refine each element to ensure a delightful experience for you. By the time our spring/summer menu arrives, believe it or not, we’ll already be contemplating cosy autumnal flavours.

And this is where you come in! We’d love to hear your thoughts. What food would you like to see alongside your favourite coffee? Any Hot Numbers Classics you want to see back on the menu?Share your suggestions on our Insta pages or email in to info@hotnumberscoffee.co.uk and address it to Louise.

Stay tuned for further updates from the kitchen, and don’t miss Reece’s latest creations from the bakery below!

Treacle-sweetened bread, anyone?!

Hey! Reece here, the Head Baker, with some exciting updates on what we’ve been up to in the bakery lately. And guess what? There will be even more in the coming months! First off, let’s talk about our bread. We took a little break from our special breads to focus on perfecting our Hot Numbers sourdough loaf, both plain and seeded. Thanks to my amazing bakery team, we’re producing some of the best bread we ever have, and consistently too. And let me tell you, with sourdough that is no easy feat! Now, we’re ready to move on to other breads, mainly sourdoughs. So, we’re launching a monthly special that will be available every weekend for the whole month.

We’re trying to try out as many different breads from around the world as possible. For February, we’ve got Limpa, a Swedish bread that Natalie suggested. It’s a treacle-sweetened rye bread with caraway and orange zest. It’s perfect for toasting with butter or equally delicious with a charcuterie or cheese board. But that’s not all! We’re also working on some new cakes to refresh our counter. Our new chocolate orange cake will be launching in February. It’s a moist chocolate cake with a fudgy icing topped with candied orange and hazelnut. It’s absolutely delicious, and even better, it’s vegan! You won’t even guess.

We’ve also been experimenting with chocolate granola bars, clementine cakes, date sponge with salted caramel ganache, and more. All of these will be available when we perfect them. And finally, we’ve been working hard to develop our own in-house made pain aux raisin to join our other pastries. I’m thrilled to say that it’s ready to launch in February, so keep an eye out for it at your nearest site.

I hope you’re excited about all these new treats – catch you soon, come and say hello if your ever at the Roastery where my lovely team and I make the delicious bakes you see on our counter.

Notes from the owner. Simon Says….

2024 has been an exciting year for Hot Numbers. We have opted for stability over growth, to ensure we are delivering the best to our customers whilst strengthening our team.

As always in café life there are exciting times and there are challenges, and I still really enjoy the engineering side of finding solutions to problems. This especially includes ploughing the Roastery Car Park pot holes after a heavy rainfall on John Wrights old Fergie tractor which is always fun!

I am proud to say we have an excellent team to fly the Hot Numbers flag into 2025 with all the exciting news you read above, so looking forward to seeing you all this year and spinning some records in Gwydir St with my friend Stevo (our original HN coffee roaster) on the first Friday of each month if you want to come down and say hi. And may I just finish by saying the music connection is really important to me and is at the core of Hot Numbers. Hot Numbers being the chart toppers of the day and named after Max Rees’s former record store on Kingston Street just off Mill Road. Local legend and Soul Boy Max sadly passed away last year but his memory lives on in the DNA of Hot Numbers!
