Since we first opened our doors in 2011, Hot Numbers has been defined by a relentless search for quality, and the Etago Es from Kenya’s Kericho County is the pinnacle of that journey. Innovation in the Cup: The Koji Process

What makes the Etago Es truly extraordinary is the innovative Koji Process, which utilises Aspergillus oryzae—the same natural culture used for centuries in sake and miso. During a meticulously monitored four-day anaerobic fermentation, the Koji breaks down starches into fermentable sugars, resulting in a cup that is incredibly plush, deeply sweet, and layered with complexity. With tasting notes of blackberry, date, and red grape, it’s a silken, celebratory brew that perfectly captures the passion and curiosity we still bring to the roastery every single day.
