The Cambridge community has already shown up in a massive way, with 191 riders geared up and a staggering £19.3K raised so far. (A huge shoutout to top fundraiser David Woodall for pulling in £7.1K on his own!)

What makes the Etago Es truly extraordinary is the innovative Koji Process, which utilises Aspergillus oryzae—the same natural culture used for centuries in sake and miso. During a meticulously monitored four-day anaerobic fermentation, the Koji breaks down starches into fermentable sugars, resulting in a cup that is incredibly plush, deeply sweet, and layered with complexity. With tasting notes of blackberry, date, and red grape, it’s a silken, celebratory brew that perfectly captures the passion and curiosity we still bring to the roastery every single day.
