A Peruvian Coffee from a new Green Bean Supplier, Chacra, this coffee comes from Juan Jiminez Cabrera on his farm El Mirador.

Additional Information

Juan Jimenez is the owner of a small, half hectare plot of land at 1700masl
in the village of El Mirador in Las Pirias, close to the city of Jaen. Juan has
been a coffee farmer all of his life, but most of the land he owns is at low
altitude and the cup quality doesn’t reach specialty grade. However, in
2019 Juan inherited a small plot of land at 1700masl which he decided to
plant with marsellesa variety, a highly productive variety from Central
America, since he had good experiences of this variety in lower altitudes.
Juan participated in a local “best of Las Pirias” competition in 2024 and
obtained second place with a score of 88 points, which was this very lot.
Processing:
This lot was processed using an extended washed process. The freshly
picked cherry was rinsed and floated to remove inferior quality cherries,
before being pulped and placed in barrels for a period of 72 hours. Once
fermentation is complete the coffee is washed twice in fresh spring
water before being placed out to dry.
Dying:
Juan dries his coffee on covered raised beds, which takes some time
given the cool climate at the farm. Juan moves the coffee three times a
day and tries to make sure that the parchment doesn’t crack during
drying. Washed coffee takes around 10 to 12 days to dry.
