The Story Behind the Cup
Juan Jimenez has dedicated his entire life to coffee farming. For years, he cultivated land at lower altitudes, where the cup quality struggled to reach speciality grade. However, his journey changed in 2019 when he inherited a small, half-hectare plot of land at a prime elevation of 1,700 metres above sea level.
Drawing on his past successes, Juan made the strategic decision to plant the Marsellesa variety—a highly productive Central American varietal known for its excellent cup quality. His dedication to this high-altitude plot paid off spectacularly in 2024 when this exact lot scored an impressive 88 points, securing second place in a fiercely competitive regional tasting.
Processing & Drying: Meticulous Attention to Detail
Achieving an 88-point cup requires flawless processing. To bring out the best in the Marsellesa cherries, Juan utilises a highly controlled extended washed process.
- Extended Washed Processing: Freshly picked cherries are immediately rinsed and floated to remove any inferior beans. The highest-quality cherries are then pulped and placed into sealed barrels for a precise 72-hour fermentation period. Once fermentation is complete, the coffee is washed twice in fresh, local spring water.
- Slow, Careful Drying: Due to the cool, high-altitude climate of the farm, drying is a slow and deliberate process. The washed parchment is spread on covered raised beds for 10 to 12 days. To ensure an even dry and prevent the delicate parchment from cracking, Juan meticulously turns the coffee by hand three times a day.
