Just like the legendary wrestlers of the ring, this coffee requires extreme commitment and effort to reach greatness. From meticulous picking to exacting processing, JASAL leaves nothing to chance to ensure this lot is a true prize fighter—right down to the hand-painted sacks it arrives in.

Exceptional Roots This unique Pacamara—a renowned El Salvadorian cross between the Pacas and Maragogype varietals—is sourced from two beautiful contributing farms. The majority of the cherry is grown at El Molino, complemented by a smaller, select contribution from Finca San Francisco.

An Innovative Process The real magic happens at JASAL’s centralized processing mill, Beneficio Los Cruces. The cherries first undergo a natural anaerobic fermentation to develop complex flavors. Then, in a unique twist, the coffee is double-soaked "Kenyan-style" for 10 hours in two separate batches of clean water. This labor-intensive extra step dramatically improves the cup's clarity, depth, and body, elevating it far beyond typical anaerobic characteristics.
